Château Moulin du Ginestra

The Moulin du Ginestra, originally known as the “Min de Plassan”, was built in 1585. Towards the end of the 18th century, the mill folded its large wings in the face of the expansion of the vineyard. Today, the two hectares, composed essentially of gravelly soil, are carefully worked by Marc Ducousso, the winegrower owner.

Servicing
Serving temperature : 17/18°C.
Decant one or two hours before serving.
Wine is not treated, deposit is natural.
Pairing
Goes well with roast beef with salt crust, duck breast or cheese platter.
Technical
Yield : between 40 and 50 hl/ha.
Full grassing, disbudding and leaf removal are carried out to obtain a perfectly spread out and aerated harvest.
Grapes are sorted in the vineyard.
Harvesting at perfect maturity.
Estate vacuum bottling.
Vatting for 3 weeks.
Medocan traditional vinification in thermo- regulated stainless steel vats.
